Stir Fried Vermicelli
Ingredients
SAUCE
- 2 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1 tsp black vinegar
- 3/4 cup unsalted stock
NOODLES
- 3 bundles dried vermicelli
- 2 tsp oil
- 1 tsp soy sauce
- 2 tbsp vegetable oil
- 4 garlic cloves minced
- 2 green onions
- 4 shiitake mushrooms
- 4 cup shredded green cabbage
- 1/2 tsp kosher salt
- 1 tsp toasted sesame oil
Directions
- In a small bowl, stir together the sauce ingredients until combined.
- In a bowl, soak the noodles in warm water for 15 minutes, then drain them. Cut the noodles roughly in half.
- Add the oil, and soy sauce and toss to coat.
- Heat a wok over medium-high heat until a drop of water evaporates immediately. Add two tablespoons of oil and swirl it around.
- Add garlic and shiitake mushrooms and stir for 1 minute.
- Add the cabbage and toss a few times, cook until the cabbage is softened, about 2 minutes. Sprinkle on salt.
- Push the cabbage to one side of the wok. Stir the sauce and put it into the centre of the wok. Immediately add the vermicelli noodles.
- Stir continuously and fold the noodles to incorporate them in the vegetables and sauce.
- Stir in green onions, sesame oil and pepper.
