Stir Fried Vermicelli

Ingredients

SAUCE

  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp black vinegar
  • 3/4 cup unsalted stock

NOODLES

  • 3 bundles dried vermicelli
  • 2 tsp oil
  • 1 tsp soy sauce
  • 2 tbsp vegetable oil
  • 4 garlic cloves minced
  • 2 green onions
  • 4 shiitake mushrooms
  • 4 cup shredded green cabbage
  • 1/2 tsp kosher salt
  • 1 tsp toasted sesame oil

Directions

  1. In a small bowl, stir together the sauce ingredients until combined.
  2. In a bowl, soak the noodles in warm water for 15 minutes, then drain them. Cut the noodles roughly in half.
  3. Add the oil, and soy sauce and toss to coat.
  4. Heat a wok over medium-high heat until a drop of water evaporates immediately. Add two tablespoons of oil and swirl it around.
  5. Add garlic and shiitake mushrooms and stir for 1 minute.
  6. Add the cabbage and toss a few times, cook until the cabbage is softened, about 2 minutes. Sprinkle on salt.
  7. Push the cabbage to one side of the wok. Stir the sauce and put it into the centre of the wok. Immediately add the vermicelli noodles.
  8. Stir continuously and fold the noodles to incorporate them in the vegetables and sauce.
  9. Stir in green onions, sesame oil and pepper.
