Roasted Red Pepper Gnocchi

Ingredients

  • 500 g gnocchi
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp red pepper flakes
  • 1/2 cup roasted red peppers diced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1 tbsp butter

Directions

  1. Cook gnocchi according to directions on the package.
  2. Heat the olive oil in a large pan and add the garlic and cook until fragrant (1-2 minutes).
  3. Add the tomato paste, red pepper flakes, and roasted red peppers and sauté for 2 minutes.
  4. Add the heavy cream, parmesan cheese, and butter.
  5. Stir until cheese has melted and the sauce is thick. Season with salt and pepper to taste.
  6. Add the cooked gnocchi to the sauce and toss to coat.
  7. Serve with grated parmesan.
