Roasted Red Pepper Gnocchi
Ingredients
- 500 g gnocchi
- 2 tbsp olive oil
- 2 cloves garlic minced
- 2 tbsp tomato paste
- 1 tsp red pepper flakes
- 1/2 cup roasted red peppers diced
- 1 cup heavy cream
- 1/2 cup parmesan cheese grated
- 1 tbsp butter
Directions
- Cook gnocchi according to directions on the package.
- Heat the olive oil in a large pan and add the garlic and cook until fragrant (1-2 minutes).
- Add the tomato paste, red pepper flakes, and roasted red peppers and sauté for 2 minutes.
- Add the heavy cream, parmesan cheese, and butter.
- Stir until cheese has melted and the sauce is thick. Season with salt and pepper to taste.
- Add the cooked gnocchi to the sauce and toss to coat.
- Serve with grated parmesan.
