Balsamic Spinach Mushrooms

Ingredients

  • 3 bacon slices cut crosswise
  • 2 large shallots thinly sliced
  • salt
  • pepper
  • 3/4 pound mushrooms thinly sliced
  • 1 pound spinach
  • 2 tsp balsamic glaze

Directions

  1. Cook the bacon in a skillet at medium heat until crispy, around 10 minutes.
  2. Use a slotted spoon to transfer the crispy bacon to a paper towel lined bowl.
  3. Toss the shallots in the pan with the bacon grease. Sauté until they’re translucent and soft.
  4. Add the mushrooms in the pan.
  5. Season with salt and pepper.
  6. Toss until the liquid has evaporated, about 6 minutes.
  7. Stir in handfuls of the spinach in batches, adding in more spinach as the previous batch wilts.
  8. Season with salt and pepper.
  9. Continue stir-frying until all the spinach has wilted.
  10. Drizzle balsamic glaze on top and mix.
  11. Transfer the spinach to a plate and sprinkle the bacon bits on top.
