Balsamic Chicken and Mushrooms
Ingredients
- 4 boneless skinless chicken breasts
- 2 tsp olive oil
- 2 cups of mushrooms, sliced
- 1 garlic clove, minced
- 1/3 cup of low sodium chicken broth
- 3 tbsp of balsamic vinegar
- 2 tsp of Dijon mustard
- 1/4 tsp of dried thyme, crumbled
Directions
- Pound the chicken breasts to about 1/4 inch thickness.
- Heat 1 tsp of oil in a pan.
- Mix 2 tbsp of the vinegar, the mustard, and the garlic.
- Coat both sides of the chicken with the mixture.
- Put the chicken in the pan until cooked through (3 min per side).
- Transfer to a plate.
- Heat the remaining oil in the skillet.
- Saute the mushrooms for a minute.
- Add the chicken broth, thyme, and remaining tbsp of vinegar.
- Cook stirring until the mushrooms are deep brown (2 min).
- Serve the chicken, topped with the mushrooms.
