Balsamic Chicken and Mushrooms

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 2 cups of mushrooms, sliced
  • 1 garlic clove, minced
  • 1/3 cup of low sodium chicken broth
  • 3 tbsp of balsamic vinegar
  • 2 tsp of Dijon mustard
  • 1/4 tsp of dried thyme, crumbled

Directions

  1. Pound the chicken breasts to about 1/4 inch thickness.
  2. Heat 1 tsp of oil in a pan.
  3. Mix 2 tbsp of the vinegar, the mustard, and the garlic.
  4. Coat both sides of the chicken with the mixture.
  5. Put the chicken in the pan until cooked through (3 min per side).
  6. Transfer to a plate.
  7. Heat the remaining oil in the skillet.
  8. Saute the mushrooms for a minute.
  9. Add the chicken broth, thyme, and remaining tbsp of vinegar.
  10. Cook stirring until the mushrooms are deep brown (2 min).
  11. Serve the chicken, topped with the mushrooms.
